Types of Honey Processes:

  • Yellow Honey: Part of the mucilage is removed, and the beans are sun-dried, resulting in a coffee with a balance of sweetness and acidity.

  • Black Honey: The maximum amount of mucilage is retained, producing a coffee with a full body and intense flavors.

Honey refers to the coffee processing method. After the coffee is pulped, the mucilage or “honey” is left unwashed around the bean during the drying phase. This mucilage, which is sweet and sticky like honey, forms a layer that influences the final flavor of the coffee, providing distinctive sweet and fruity notes.

What types of Honey Processes exist?


The differences between the types of Honey Coffee lie in the fermentation and drying times. This is crucial for characterizing the different types of honeyed or Honey processes. You can notice it in the fragrance, aroma, and flavor, especially when the coffee is in its “parchment” state. The appearance of the coffee can range from caramel-like to a dark coffee hue in the husk surrounding the bean. In the cup, you will also find differences in the profiles; just taste and feel the delightful flavors of this type of coffee.

Here are the different Honey Coffees you’ll find:

  • Yellow Honey: Undergoes anaerobic fermentation for 30 hours in the cherry. It is then pulped and sun-dried, resulting in a coffee with a balance between sweetness and acidity.
  • Red Honey: Undergoes anaerobic fermentation for 40 hours in the cherry, then pulped and fermented anaerobically for another 24 hours. The coffee is then sun-dried for 15 days, intensifying the sweet notes.
  • Black Honey: Undergoes anaerobic fermentation for 72 hours in the cherry, then pulped and fermented for another 70 hours. The drying process takes at least 25 days to achieve the black honey profile.
